Potato Soup
4 cups water2 medium potatos (16mg for a potatoe) 2 small red potatos fresh onion (1/2 cup 2mg sodium) fresh celery (1 stalk 35mg sodium) frozen peas (1/3 cup 53mg sodium) fresh carrots (1 carrot 25mg sodium) fresh mushrooms (1/4 cup 1mg sodium) black pepper chives parsley 1 teaspoon very low sodium RC beef base (1tsp 35mg sodium) 1 tablespoon creamora (0mg sodium) 1 cup skim milk (110mg sodium) 2 Tablespoons flour
1 Sausage Patty (check your labels - the one we use has 220mg sodium for one patty - can be omitted) Makes about 5 cups of soup... about 300 mg sodium with no sausage... about 529mg sodium with sausage for the entire recipe.
Cook the sausage patty in a deep pan... (sausage can be omitted)...
Pour the water into the pan... peel and chop the potatos then add to the water. Add the vegitables you enjoy... add as many of each as you would like. Add the spices that you enjoy. Add the Beef Stock and Creamora (adds a nice creamy taste with 0mg sodium!).
Bring to boil... then turn to simmer... simmer for about 25 minutes or until vegitables tender.
Put the milk into a cup... add the flour and mix... then pour this into your soup. Very Low Sodium RC Beef Base can be purchased online from Redi Base
