Chicken & Dumplings
Chicken... breast or thighs or drumsticks(breast 65mg sodium - drumstick 45mg sodium) 8 cups water 1 tsp No Salt Chicken Stock (0mg sodium) fresh Onion (1/2 cup 2mg sodium) fresh Celery (1 stalk 35mg sodium) fresh Carrots (1 carrot 25mg sodium) fresh Mushrooms (1/4 cup 1mg sodium) Pepper Paprika Thyme Garlic Powder (or fresh) Use the pieces of chicken you enjoy. I like dark meat... but it is suggested that I eat more chicken breast.
Remove chicken skins... rinse in cold water. Place the chicken in a deep pan...add 1 tablespoon olive oil... then fry on all sides. Add 8 cups water to the chicken and 1 tsp chicken stock (you can add more chicken stock as your tastes likes) you can buy this from Healthy Heart Market). Cut up vegitables and add to the chicken. Add the spices. Let simmer for 45 minutes.
Dumplings
2 cups Flour Mix all together in a bowl. The mix should be wet. Pick up by the spoonfull and add to the chicken. Cook uncovered for 10 minutes. Cook covered for another 10 minutes.
